Empanadas
One of the things that my mom likes to do during Holy Week are empanadas.

3 cups all purpose flour
¼ cup sugar
2 sticks cold butter, cut into 16 tablespoon size pieces
2 eggs
2-4 tablespoons cold water
Sugar for sprinkling
For dough
cups chopped fresh pineapple
¾ cup dark brown sugar
¼ teaspoon ground cinnamon
¼ cup cold water
1 ½ tablespoons cornstarch
For pineapple filling
Bake at 375°f for about 30 minutes
