This tune is "Vergers." Note how the smooth starting sound changes a few seconds in when the player, Nigel Eaton, changes his cranking to sound the chien.

The hurdy-gurdy sounds kind of like a cross between a bagpipe (because of the drones) and a violin (because of the strings). If the chien is in use, its buzzing adds a kazoo-like element.
