Some Microbes in sourdough bread are: Yeast, Candida humilis, Candida krusei, Kazachstania exigua, Pichia saitoi, Saccharomyces cerevisiae, Torulopsis holmii, Lactic acid bacteria in the Lactobacillus family.

How Are The Microbes Used?

The microbe yeast is used to make the dough rise. The lactic acid bacteria also acidifies the bread. The air that rises is oxygen.The yeast is also put in the bread so the bread can rise. The bread rises when the yeast emits gas making small bubbles in the bread. This makes the bread light and fluffy.
