They put soybeans in a steam kettle and fill it with water than steam its or four hours while putting roasted wheat through a mill which brakes the grain into several pieces. After the soybeans are ready the put them on trays to cool. When the beans cool they add the wheat.then they add yeast and mix it all together. Then to make a brine they mix together sea salt and spring water. After the sea salt dissolves they add the soybean mix. Then blend it and leave it to ferment. For six weeks they blend it daily to release gasses. Then they only mix once a week for 12 months. Then they stir it once more and pour it in on a sheet of muslin lining a tub of a stainless steel press. They fold over the sheet and then lay down planks of wood on top of it then apply six tons of pressure with the press to squeeze out the liquid which is the soy sauce which goes through a hose into a barrel and use the stuff left behind as animal feed.
