What happens if you excavate a potato?

When you excavate a potato, you pretty much let it sit and rot in salt. The Egyptians did that to their mummies too. In the process you let it sit for about a week or two and then you check in on it. It gets smaller, smells worse, and darkens each time.

I honestly don't think I had a hypothesis. But I think mine would've been it will rot.
