Place pumpkin in a large working surface with a sharp knife carefully cut off pumpkin top and save it.remove the seeds cover with parchment paper,and microwave for 25 to 30 minutes, or until pulp is soft. Remove and set a side to cool.
Place olive oil in large skillet over medium high heat. Add onions and jalapeƱo cook,stirring accessionaly until tender,3 to 4 min. Stir garlic and cook until fragment , 40 seconds. Reduce heat and add tomatoes. Cook until soft, stirring accasionally,8 to 10 min. Turn to high heat and add shrimp. Season with salt and pepper. Cook,stirring constantly, until shrimp starts to curl, 3 minutes. Remove from heat, fold in scallions and cilantro. Set aside.
Transfer pumpkin to microwave and cover with the top. Microwave for 10 minutes. Remove top and scoop pulp and shrimp sauce over individual serving plates. Serve with a side of jasmine rice.
