Julia Child had a goal of adapting sophisticated French cuisine. With this goal she made a two volume book, along with her two partners Simone Beck and Louisette Bertholle. They each earned $750 for their work. However the original publisher rejected their manuscript b due to it 734 page length. Another publisher accepted the 3lb cookbook, it was released in September 1961 under the title, "Mastering the Arts of French Cooking."
