Importance of Hydrophilic and Hydrophobic substances

The hydrophilic heads create surface tension with the water allowing the water to be there and the cell membrane to be a part of the outside environment. Then the fatty "tails" or lipids and proteins in the center allow the cell membrane to have its own internal environment so that the cell membrane as a whole is productive, and is safe for its own internal parts.
