冰激凌全程冷链过程中较长出现一些非规范化运输操作运输,如由于冷链运输中温度的波动使得空气泡逃逸和冰出现充结晶的现象,致使冰激凌形体塌陷,并伴有大颗粒,口感粗糙。而且温度的波动对于🍦的脆性有毁灭性打击。

共有三位实验人员参与操作,跟踪其上海市内的配送。测试时间是从早上6:30到下午的15:30,进行全程跟踪
