Observations

I noticed that through out the course of this small mummification process, my potato decreased in weight a lot the first time, then decreased only a little. This caused me to wonder why it did this. I thought it might be because there was a lot of moisture in the potato the first time and it all got sucked away into the salt. That's why there was a big decrease in weight. Then there was only a little bit of moisture left in it. All of that moisture got sucked away into the salt and since there was only a little bit of moisture, it only decreased in weight a little bit.
