Before lesson two you need to complete the following tasks:

1. List the advantages and disadvantages of cooking with vegetable oils.

2. Explain the difference between saturated and unsaturated fats and explain how the bromine test for saturated compounds works.

3. Describe how vegetable oils are hardened and explain why it is done.
