6.3 Emulsions

Before lesson three you need to complete the following tasks:

1. Describe what an emulsion is and explain how an emulsifier works (with a diagram)

2. Evaluate the use of emulsifiers in food (list some good points and some bad points and then decide if you think they should be used and why).

3. Evaluate the use of vegetable oils in our diet.
