Procedures

- Butter the pans or line them with wax paper.

- Mix the chocolate, sugar, salt, half and half, and corn syrup over medium heat. Keep stirring until the chocolate is melted and the fudge begins to boil.

- Let fudge cook without any stirring until it reaches a boil.

- While the fudge cooks, dip pastry brush in a little warm water and use it to carefully wash any sugar, chocolate, or whatever off the sides of the pot.

- Take the fudge off the burner and let it cool, undisturbed until cooled

- Add the vanilla and butter and keep stirring until the surface starts to dull.

- Once fudge had began to dull start adding your mix-ins a quarter up at a time.

- Spoon half the fudge into each pan. Put one pan in the fridge and leave the other out at room temperature, allow both to cool completely.

- When I take pots off the burner I'm going to let one pan cool 10 minutes longer then the other.
