Roman Chicken
-2 1/2 ib. chicken, cut up
- 1 clove garlic
- 1/2c. Onion, chopped
- 3/4 c. Celery
-3 1/2 c. Canned tomatoes
- 1/4 c. Water
- 1 1/2 tsp. Dried parsley
- 2 1/2 tsp. Salt
- 1/8 tsp. Pepper
-1/4 c. Parmesan cheese
- 1/2 tsp. Oregano
Brown chicken pieces in butter aftershave rolling in flour. Remove chicken. Add onion, garlic, and celery. Saute until tender. Add tomatoes, water, salt, pepper, and oregano. Return chicken and simmer 45 minutes.
