Observations

Day 1: Potato was ordinary color and texture which I cut to be 0.8 ounces. I think that the potato will shrink and turn dry, as well as lighter in weight, and darker in color.

Day 8: Almost everything happened as I guessed, except that the salt was brick hard. The potato's weight lowered to 0.5 ounces. Also, though it was dry, it was still a bit squishy. I think that next time, it will shrink a bit and be harder and lighter in weight.

Day 17: (Weight not measured because I was absent and food scale was taken home). Hard but a very slight hint of squishiness. Color was darker and it shrunk a little bit. The salt was hard in the middle like a circle-shaped block, but other then that, it was powdery and soft like before.
