General mechanism of enzyme activity:

1.) substrate binds to active site
2.) together they form the enzyme substrate complex
3.) internal rearrangements leading to catalysis (water molecule is removed and a peptide bond is formed)
4.) enzyme releases the product or the dipeptide

**the free enzyme has not changed in the course of the reaction so it can go on and catalyze another substrate**
